Enjoy safely!

Towards the end of the year, diarrheal diseases such as campylobacteriosis are on the rise. The trigger is often the improper preparation of food, especially in the context of a fondue chinoise. The Federal Food Safety and Veterinary Office (FSVO), together with the Association of Cantonal Chemists of Switzerland (VKCS), is reminding people of the various hygiene tips for safely enjoying fondue chinoise. In addition, the FSVO is running a competition this year that is also intended to familiarize people with the hygiene rules.

The competition is being held as part of the "Enjoy safely" information campaign on the website www.sichergeniessen.ch. Those who answer the contest question correctly can win a fondue chinoise meal with bed and breakfast in a hotel in the Bernese Oberland. Through the contest, participants can familiarize themselves with the rules of hygiene in the preparation of dishes in general and meat fondue in particular.

Observe hygiene rules

Proper preparation of meat fondue can significantly reduce the risk of diarrheal disease such as campylobacteriosis, as well as the transfer of antibiotic-resistant germs to humans. If you prepare it correctly, you can enjoy it safely. The FSVO and the VKCS call for the following Hygiene rules in memory:

Separate correctly

  • Always use separate cutting boards, kitchen utensils and plates for meat and other food.
  • When eating always use two plates: one for the raw Meat and one for the cooked meat, side dishes and sauces. The raw meat must not come into contact with other raw or ready-to-eat foods - such as side dishes or salad.
  • Drip juice from fresh or thawed meat must not come into contact with raw or ready-to-eat food.

Heat correctly

  • Always cook meat, especially poultry, thoroughly. It must no longer be raw on the inside.

Enjoy safely" campaign

The "Enjoy safely" campaign was launched in 2016. Since 2018, the campaign has focused more on young men between the ages of 18 and 30, as statistics show that they are heavily affected by campylobacteriosis. Accordingly, the website www.sichergeniessen.ch relaunched.

The campaign is supported by various partners. With simple tips, the campaign aims to help reduce the number of cases of illness caused by Campylobacter and other bacterial infections. The focus is on the correct handling of food.
